Harvesting Tips
Try to harvest root crops when the soil is relatively dry. They
should not be woody or overgrown. Tops should be trimmed to 2 inches above the
crown. Long tops draw moisture from the roots and cause shriveling. Take care not to
break the natural protective skin or outer layer of the specimen. Stems should be
left on all vegetables except tomatoes and muskmelons. the stem helps keep the
vegetables from drying out.
Cleaning Tips
Dirt detracts from the appearance of
vegetables, but it is not advisable to wash all vegetables to clean them.
Tender-skinned vegetables such as peas, beans, summer squash, peppers, tomatoes, and
eggplant should be wiped clean with a soft cloth. If necessary to wash root crops,
soak in cool water and gently wash with soft cloth; do not scrub. Leafy crops such
as cabbage, lettuce, spinach, and Swiss chard can be washed carefully. A soft
bristled brush can be used to clean cauliflower, kohlrabi, cucumbers, and onions of
any soil.
Preparing the Vegetable Specimen for Show
Snap Beans: Harvest before
seeds appear, when the seeds are about half grown. The ends of the pods should not
be broken. The entire stem should be left on. Avoid showing blemished or wilted
specimens.
Beets, carrots, parsnips, turnips, rutabagas: Tops should be trimmed off
1 1/2 - 2 inches above the crown. Trim side roots. Trim tap root of beet and turnip
2?, carrot 1?, parsnip 1/2?, rutabaga 1?.
Lima Beans: Seed should be full grown but
still tender and before they have changed from green to white. Prepare like snap
beans.
Broccoli: Heads should be dark green and compact. Avoid yellow flowers in
head. Stems should be cut 5-6? from the top of head.
Cabbage: Select firm compact
heads. Stems should be cut 1/4? below the head. Leave 2-3 outside wrapper
leaves.
Cauliflower: Heads should be white, compact and not ricey. Stems should be
cut to leave 4-6 leaves. Trim leaves to 1/2? above the white head.
Sweet corn:
Select ears well filled out to the tip. Kernels should be milky. Trim silks to 1?.
Trim shank to 1?.
Cucumbers: For pickling, select fruits 3-5? long. For slicers,
select fruits straight, dark green, 6-10? long. Leave 1/4? stem.
Eggplant: Trim
stems to 1 1/2-2?. Calyx should be green. Avoid large fruits.
Kohlrabi: Ball should
be 2-3? diameter with root removed just below the ball. Trim back leaves on upper
one-third of ball to 4-6?. Remove all other leaves.
Muskmelon: Harvest fruits when
they separate easily from the vine. Specimens should be free of spots and
injuries.
Onion: Have specimens mature and cured. Do not peel -- only outer scales
that are broken or discolored. Trim roots to 1/2?. Trim dried, twisted tops to
1-2?.
Peas: Select bright green, well-filled pods. Do not wash the bloom. Leave
stems as beans.
Peppers: Select specimens that are uniform in size, shape, and
color. Trim stems to 1/2-1?. All specimens should have the same number of
lobes.
Potatoes: Tubers should be uniform in size and shape. Washing is permitted,
but do not scrub. Avoid defects or disease.
Pumpkin: Specimens should be mature.
Trim stems to 2?. Wipe clean.
Summer Squash: Select small to medium fruit. Leave
stem 1/2?. Zucchini, straightneck and crookneck should be 6-8?. Round, scallop type
2-3?.
Swiss Chard: Select plants that are fresh, crisp and bright green. Trim off
roots and trim butts to pyramid shape.
tomatoes: Remove stems. Fruits should be
perfectly shaped and free of cracks or blemish. Show with the stem scar
down.
Watermelon: fruits should be mature but not overripe. Leave 1? stem. Wipe
clean.
